Welcome to my plant-based cooking journey! After living the first twenty years of my life nearly “animal-based,” I made the switch to a vegan diet in June 2019 for health reasons. After making the switch, I initially found it quite challenging to create easy, tasty, AND plant-based food. I started my food Instagram, @takingtheveganhighroad, soon after my vegan journey began. If you scroll down all the way, you can witness first-hand these cooking struggles (like seriously, c’mon Eliza in June 2019 - a potato with onions, tofu, and paprika is not a meal). Slowly, I have learned a lot about plant-based cooking - what works, what I like/dislike, and how I can continue to stay healthy while eating incredible food.
